Unmistakable aroma and juiciness
Apricot
trees were ever domiciled in the Spitzer Graben.
Especially the interplay between warm pannonic air masses and the cool downslope wind of the directly bordering Waldviertel bestows the fruits an unmistakable aroma and juiciness.
The old tree population of the original apricot species is the foundation for high quality fresh goods but also for the further refined products of the fruit (like jam and distillates). The apricot schnapps is only available as 100% distillate or respectively as Österreichischer Qualitätsobstbrand. The addition of sugar or flavours is prohibited.
Apricot schnapps is provided by our farm in 2 quality levels:- Apricot schnapps "Ernte alter Bäume" (harvest of old trees)
- Apricot schnapps "Herzstück" (heartpiece)
Both of them are based on the guideline „first harsh schnapps, then refined schnapps“. For the heartpiece the centerpiece from the middle reach is being fractionated.
The mash for both schnapps is taken from leafy gardens; only the mature fruits are collected daily and destined immediately.
Then fermentation takes place in steel tanks, slowly and cooled. In order to avoid aroma deficits the process of scorching is done already by the end of August.
Besides the apricot schnapps we also offer small amounts of marc schnapps and nut brandy.
